This salsa is great to make when tomatoes are ready at the end of summer.
- Four large tomatos diced with the seeds removed
- 6 cloves of garlic peeled and smashed with knife
- 1 or 2 medium sized onions diced
- 1 or 2 fresh jalapenos or other spicy chili (depending on desired fire level)
- small bunch of cilantro chopped
- juice of 2 limes
- sea salt to taste
Mix all of the ingredients in a suitably sized bowl, then cover with plastic wrap and let sit for several hours to let the flavors mix. This is especially important for the garlic flavor to spread through and mellow out. The key ingredient to not leave out is the cilantro. It gives the salsa a fresh bite that is sorely missed if it isn’t present. Enjoy!
